My Infamous Pasta Primavera

Tonight I made my famous...er, infamous...pasta primavera. This is a picture of the original recipe I use, which I first saw on Giada De Laurentiis' show "Everyday Italian" six or seven years ago. I have altered it over the years to suit my tastes and cooking needs.

SIDE ALBEIT RELATED NOTE: When you type in "pasta primavera" into Google for images, it's amazing how different each one looks.

I usually boil whatever small pasta is on hand; I can't remember ever making it with spaghetti or fettuccine noodles. That doesn't seem right in my book. Farfalle pasta (bowties) is especially nice because "farfalle" means "butterfly" in Italian, so it is perfecto for a "primavera" (i.e. spring) dish. :)

Zach doesn't really care for the zucchini, and, as we did not have any, I substituted it with a bag of frozen peas.
(I did, however, make a trip to Harvest Foods for a green bell pepper because I HAD to have at least one bell pepper, and the green is the cheapest. Using twice as many carrots made up for the other pepper.)
Normally I do not like peas, but these. were. great.
(Roasted carrots are still my favorite.)

The problem with cutting all the vegetables into thin strips is that they do not cook at the same rate. The carrots tend to take longer while the squash and zucchini get mushy, and the onions burn, which I don't really mind at all. :) I looked up how to roast squash and found a different way of doing it: this time I cut it lengthwise after chopping the necks off and into halves. It turned out so much better.

I never have used cherry tomatoes in my recipe because Idon'tlikeem. : (~ Instead I usually add a can of chopped tomatoes or tomato sauce. : )~ Plus this gives it a bit more moisture.

I just realized I didn't put any Parmesan or any kind of cheese on it.
This memory slip probably occurred because I had the peppers & peas and squash & onions in the oven for twenty or so minutes before I realized that the oven had gotten turned off in taking out the carrots. *lol*
To get everything evenly cooked, I kept the veggies on separate cookie sheets, coating them with a little oil FIRST and THEN sprinkling them with a BIT of Italian herbs, salt, and pepper. Then I started cooking them in stages while making frying some chicken, boiling the pasta, and buttering breadsticks. (Thank you, Zach, for always helping me!!!!!) By the time I realized my last two cookie sheets of veggies weren't cooking, everything was nearly ready. *le sigh* In my mind, it was all supposed to come out at the same time. I really thought we were going to eat until 9 'o clock after I had started cooking at 5. ; )

(I get REALLY mad at myself when I am cooking. At least I don't get mad at everyone else, right?)

Fortunately EVERYTHING turned out all right. Once I did get the vegetables fairly browned, I reheated the carrots...and the chicken, and all was well.

Speaking of the chicken, I used a new marinade that worked perfectly when I sauteed/fried the chicken in it. I don't always add chicken, meat, and/or seafood, and if I do, I usually take a shortcut and buy the precooked packets of Tyson chicken and/or steak strips. (Canned chicken freaks me out.) Today I mixed a 1/4 cup of olive oil with a 1/4 cup of lemon plus a dash of lime juice and a dash of Worcestershire sauce. I marinaded the chicken breasts in that for 5-6 hours. When it came time to cook the chicken, I poured the marinade into the pan, added a little more oil, and threw those chicks in! Though rather lemony, they turned out amazing and complemented the pasta well.

It seems I always end up with some kind of tale of woe when I make pasta primavera. (One time when I was making it, our neighbors came over to tell me that my car was broken, and then I got into a fight with a friend.) But it is definitely worth it...the house still smells like the inside of an Italian's mouth. : O

And a big thank you to Judy and Marion for showing me how to knit like a professional! Apparently I had not been doing a knit-stitch, but a kind of garter stitch that was a cross between a knit stitch and a purl in that I was holding my needles to knit, but moved the yarn round like a purl. Oh, wells...it's an Ashley stitch!

I still get such a thrill watching this show!
It was my favorite when I was a little girl, and I would cry if I missed an episode. ; )
(The sorrows and heartbreaks of children are very dear to them and should be taken seriously, thankyouverymuch.)
I waited and waited for the first disc to come in from Netflix as it took us two days to finish Key Largo and two days for it to get here to find that it only has one episode. *boo hiss*
As of right now, I'm on my third time viewing that one episode. : )

Zach's commentary adds another layer to my viewing pleasure:

Today was gorgeous, and tomorrow will be, too. :)
I'm so excited!
If only summer was like this all the time, then I could REALLY love it.
It's so nice being able to journey outside without breaking into a sweat.
We enjoyed sitting on the porch today and feeling the breeze while watching the branches wave like long lost friends (because we haven't had wind like this in FOREVER, so those poor trees have been oppressed by the heat all season) and the "sheep" dog from up the road wander into the yard. (BAD dog!)
Tonight we actually walked around the block a couple of times and talked about Halloween.
I can almost taste fall...almost...

Of course if it weren't for the 100+ degree weather, I probably wouldn't enjoy this weather as much. ;)

Pie, Porter, and PANEM!!!

Look what FINALLY came.
My wonderful husby ordered this back in January, and I never thought this day would get here, especially as UPS did not deliver it until 6:30. (What?!) HUZZAH!

I had a piece of pie and a Paradise Porter before rejoining Panem, which means "bread" in Latin, BTW. :) I finished reading the book about 1:30 in the morning. I don't think I would have been satisfied with any other ending, but I still felt somehow disappointed over how the war played out (rather than the romance part--I still do NOT fixate on that, Sommers!). I am trying to remember this is a dystopic society and to accept the possibility that the Capitol itself is not wholly responsible for what has gone on (and wrong) in Panem--just as Katniss defends her prep team against their involvement. Furthermore, all societies are somewhat dystopic (Hello, America!), so things could not end too perfectly. I know I wouldn't be happy with an idyllic ending. Still I wanted to be left with more hope. Er, I don't know; I just need to process my thoughts some more.

Tonight we had my birthday pie (chocolate chess). I had to wait for it because my birthday fell during thesising, graduating, and moving, then I didn't know what kind of pie I wanted, and finally I hate to wait until everyone else's birthdays had passed so the house was empty of dessert. It was worth the wait. :) It was yummy! Beverly did a great job.
I've never known someone to have a birthday go over three months. ;)

journaling, old school style

I started journaling again today! :)
I haven't done it since Zach was in China May 2009.
That's just crazy. I used to write every (other) day and have a nice collection of filled and empty journals and diaries from when I was about 9 or 10.
Five or so years ago, I purchased a divided notebook and decorated it with a collage in a specific color. I've done blue, purple, and red over the years, I believe.
This is a picture I took of my green journal when I was making it: May 16, 2008. I love how the snake coils out of the teapot.

But I've been so bad about writing! ;)

Anatoliy joined us for a trip to Hot Springs, but we checked out Diamond Bear Brewing Company first!

After a sampling of three beers from among the Paradise Porter (my fave!), Presidential IPA, Two Term Double IPA, Southern Blonde Lager, Pale Ale, AND Root Beer (yummy!), we toured the tiny factory and got to check out the machines.

Then we winded our way to Spa City for dinner at Brau Haus and night swimming. Fun times! Thanks for coming! :)

Apples to Apples 2

After dinner last night, we played Apples-to-Apples. I tried to get a photo of the entire table, but no such luck. I also tried to get a picture of Jake being happy that his mommy finally won a card before he stole her shoe. But Erin and Josh seem to be enjoying themselves here. :)

(This is seriously the only game I can win. ;)

We also went to lunch at Rolando's, and Josh treated us. It was sooo good. I also met one of Zach's friends who shares my cousins' unique last name (Shurtleff). We had a great time hanging out with you guys yesterday. :) THANK YOU!!!

My Friend Anne with an E

Tonight Anne and I finally got together for an overdue coffee date at Java Primo. (I wanna go back for some gelato, prettypleasewithacherryontop. ;)

Anne was one of the first friends I made at UCA a million years ago when we had British Lit I and American Lit I together, and I missed two days of classes and messaged her on here-back when facebook was about being in college and showed your classes and who was in them. I also messaged Monica that day to find out our assignments. (I believe I also messaged Aaron, too, but I don't think he has ever been a reliable source for assignments.)

We're all old now.
We're grown-ups now.
Scratch that. We're adults now.
(Adults is a much more "grown-up" word. ;)

This picture was taken at Danielle and Charles' wedding, just a little less than a million years ago. I am so glad I got to see my Queen Anne (with an E) and catch up. She's so sweet, and I am so glad that we have stayed in touch. The only thing that would have made it more perfect would have been to have Monica there while we dined on Chik-Fil-A and then went for coffee (at Java City--that's what we did on breaks between classes). Nope. I do NOT miss the student center. But I do miss my English friends!!

It's pretty funny that Anne and I became friends and that I married Zach considering they knew each other working at the movie theatre in Hot Springs and actually went on a few dates. ;)

I'm a sexy knitter

So...it's not much (yet?), but look what I'm knitting!
It's a funky (i.e. not perfect) skinny color-block scarf in navy blue, grey, and teal. I bought this knitting kit (and this yarn) in December 2008 with great plans to learn to knit over Christmas Break. *haha*

I've tried several times (including during this summer whilst being unemployed and out of school) to pick it back up and try with all my might to get past purling. I. just. can't.

(Hopefully Judy Tucker or someone else or videos on the Internet can help my poor, pitiful, non-purling soul.)

I have to feel like I am learning something, so I just decided to jump in feet first and knit SOMETHING other than a random practice piece. I can do an okay knit-stitch, so I just started making a neat little square. (You can see my grey square is somewhat better than the navy one because practice makes [more] perfect.)

I knitted a navy square, but I didn't start the next color correctly and had to unravel it all. I finally got the navy and grey done, but the fuzzy teal (to give it some texture) did not cooperate very well, and, when I was almost done with that square, I had to unravel it. BUT I am starting to have something to show for my hard work. :)

Scott Pilgrim vs. the World

Scott Pilgrim vs. the World was such fun! I was a little apprehensive going into the film because I thought I was going to miss lots of gaming references. And it's very likely I did. ; )~

But I quite enjoyed it.

The deliberate use of the laugh track reminded me of the laugh track in American Born Chinese by Gene Luen Yang. Now obviously they were not used to produce the same effect, although the laugh track was not applied to a wholly comical situation in either work.

But the use of it in this film really reminded me how Yang layered reality over fantasy/mythology over reality TV (which is reality AND fantasy...or rather, unreality). Wright's film also flawlessly layered reality upon fantasy into this new space that I found really enjoyable.
(I especially liked when the exes turned into coins. *tehe*)

And Allison Pill's uber-freckled face just tickles me to no end.

I can't help but love Michael Cera. And Sex Bob-omb.

Our Big Comfy Couch

We got a couch!
(Well...we get it this coming week. And, as we don't yet have jobs or permanent residences, we won't really use it yet. BUT we have it for when we do!)

It's a contemporary twist on a more traditional piece: a settee in rich cinnamon chenille with an exposed cherry frame. This picture really doesn't convey the color, but we think it's going to go quite nicely with our rug of black, wine, sage, goldenrod, and a cinnamon-y tan for a modern British colonial look. I removed the pillows for the picture because I think we may get some other/more toss pillows that will tie everything together. We'll see. :)

Friday the 13th!

We planned a game night with Rob and Mechelle, and I volunteered us to bring a dessert/snack. After going through our candy supply and realizing we have TOO many Cadbury Mini-Eggs, I decided to check into a recipe Kevin and Bree had suggested back in June: mini-egg cookies.

I found many recipes--more than I had expected--so the decision was no longer to make a mini-egg cookie, but what kind to make: shortbread, chocolate, sugar, birds' nests. (The latter are made with coconut and chopped nuts; I am sure you have seen some similar ones before.)

It was kind of a cross between a sugar and butter cookie.

I wanted the tops to be pretty, so I reserved some of the cracked eggs, but I don't know if it was worth the trouble. Besides the blue eggs became a lovely green beneath the dough. We had to tweak it a bit more because the oven cooked them four to five minutes, but none got burned...as did none of my appendages, thankyouverymuch. ;)

On Fire

I really need to stop burning my hand. : /
At least this time I don't have a thesis to write. *lol*

Luckily I still had prescription burn cream. I think this burn is worse because I thought I was just feeling a lot of heat through the oven mitt and held onto the cookie sheet for a lot longer than when I swiped my hand across the heated skillet last year. You know how it feels when you get burned--you don't notice the degree of it until afterward. Turns out the oven mitt had a hole in it. Zach effectively killed it by ripping it apart and throwing it into the trash.

It was pretty fun watching Zach try to wash my face for me. He only used one hand, and I told him I could have done that myself. ;)

Today, while working on Momo's birthday present, I got to look at lots of pictures of Zach and his family in the years before *we* existed.

I also got to see some of the pictures of times we have shared, including my first and only Christmas with the Pharr side--I never get tired of saying that!--of the family. (It is the only one I've had so far as we were honeymooning during the past one.)

That's how I knew this family was a keeper, corny as that may be!

Date Night at the Malco

Zach and I caught the last of the Malco's summer movies tonight with the documentary Forgetting Dad and the horror Night of the Living Dead.

Remember that time Dr. Sommers suggested you eat my brains and wear my scalp as a skull cap? *nom nom nom*

Anyhoo, we started out our date night at the Dixie Cafe. I had never had the fried corn-on-the-cob, but it was delicioso! We brought back enough chicken to feed a small army (or us for another meal).

Forgetting Dad was about a son detailing his father's amnesia and disconnection from his extended family. It was really interesting, and I felt it was structured to mirror the way one with amnesia would feel: we kept getting new layer after layer of this father, and no two of the children had the same perspective on what happened. Of course, I imagine this happens with any normal dad, but all the same, I think the documentary's style emphasized how disparate each of them were from their father and reality.

And Night of the Living Dead? I kept hoping Ben would make it, and Barbra is a scream! (Meaning I was to shake her and scream or shake her until I scream...) I'm always glad that the young couple burn up before getting eaten. (But do they really have to show the zombies chomping away?!) I can't help but laugh at the news reporters and vigilante ghoul-hunters. The zombie daughter is terrifying in the movie poster in the Malco lobby, and we were told at the beginning of the show that anytime Living Dead plays, it stirs up the ghosts in the theatre. Fun times to be had all around!

I love so much about this movie: the snow falling in the Great Hall at Christmas, little frantic Doby, Hermione turning into a cat, Moaning Myrtle, Filch freaking out about Mrs. Norris, a young Hagrid looking like he should be in The Cure (according to my husband), a nice Percy, the flying car, Ron's broken wand backfiring, Gilderoy Lockhart, Ron's cowardly heart (although I can't blame him for hating spiders), Ginny's squeal upon seeing Harry at the breakfast table. :)

I could go on and on and on...

I do not like the skittering of the spiders over the forest floor. *ick*

I stand by my opinion that it's a book (at least partially) examining race: mudbloods, purebloods, muggles, squibs, half-giants, centaurs, etc.

My chile relleno at El Porton last night was more relleno than chile. So disappointing. :( I wanna go to On the Border!

It was great to see my Omicrons! I just hate that it takes so long to get together... Hopefully we can keep having six-month reunions despite being scattered across the state? We better. :)

Now I know why I kept thinking of The Decemberists while looking through these books: Carson Ellis, who illustrates The Mysterious Benedict Society series, is known for working with them. [I am silly.]

Also, last night Tommy Cash pointed out a Decemberists song ("The Infanta") that played in Mad Men. I remember the Maidenform montage very well because that's what I wear *lol*, but didn't think anything of the song at the time. Usually period pieces are played. Now I hope I don't associate the dysfunction of the 60s with these lovely books...
;)

Happy third birthday to my "best" niece, Briley Renee!

This picture was taken right after she "opened" her Princess Jeep, and you can just see the joy on her face and her free spirit shining through. She has become such a talker and is so smart and funny. :)

Boogie, it was such an honor to be there on the day of your birth and each birthday since, and I can't wait to see what God has in store for your fourth year. But you're growing up too fast! (Soon enough she really will be driving... ;)
